HOW TO MAKE STRAWBERRY-THYME SYRUP

This syrup was one of the first ones featured on my Instagram awhile back, but I never ended up adding it to my blog (rookie mistake). Nonetheless, here is a delicious syrup which you can make with ease and it can be used in a variety of delicious cocktails (sub this in for the cane syrup used in a daiquiri and you have yourself an herbal strawberry daiquiri...pretty tasty if you ask me).

Strawberry-Thyme Syrup

1 Cup Water
1 Cup Sugar
6 Fresh Strawberries cut in half (with stems removed)
2-3 Sprigs of Thyme

Step 1: Prep strawberries by removing the stem (either using a straw to poke it through, or cut off the top), then slice strawberries in half vertically.
Step 2: Add thyme sprigs to the pan and turn stove on to medium heat to lightly toast before adding the rest of the ingredients - this will open up the earthier aromas of the thyme.
Step 3: While stirring the mix so the sugar dissolves, lightly press on the strawberries to release extra flavor; let simmer.
Step 4: Once all the sugar has dissolved (about 5-7mins), remove from heat and let cool for about 7-10 mins.
Step 5: Strain ingredients into bottle of choice & add fresh sprig of thyme. You can store the syrup in your fridge for up to a week.
